Typical Tortilla Usage

Hello there! I feel like we haven’t hung out for quite some time. Blogging has taken a back seat over the last week. I had nothing to say … didn’t feel the need to spout unnecessarily :)

But I’m back for another rendition of What I Ate Wednesday. Kudos to Jenn for putting this all together! I actually remembered to take photos of my meals for an entire day (shocking!), as opposed to my usual sporadic food photography from a whole week. Here’s Tuesday!

Breakfast:

This wouldn’t be a Yellow Haired Girl WIAW post without a wrap. Here’s my breakfast wrap – whole wheat tortilla/turkey breast/eggs/chia/dill cream cheese/roasted red pepper hummus. So good. So filling. So repeating this everyday for the rest of my life.

Snack:

Vitamins aren’t a snack, I know ;) But I downed a couple with some of a bottle of Bolthouse juice before lunch.

Lunch:

Who says I can’t have two tortillas or two servings of turkey in one day? I’m the boss here. I made a quick quesadilla for lunch with turkey + shredded cheddar + green peppers. Anyone else not cook their veggies for quesadillas? I don’t. I like the crunch.

Snack:

Can’t stop. Won’t stop.

Supper:

This wonderfully ugly concoction is red lentils + quinoa + ground chicken + copious amounts of Wholly salsa (I’ve developed a very serious addiction to the stuff). Inhaled in front of Ben & Kate … I’m really starting to love that show! Anyone else watch?

I’d Never Miss It

Well look at that.

I’ve fallen off of the blogging map again. Jeez Louise. I’m sorry (pretend you missed me, alright?). Life has been a little bit crazy. Blah blah blah, you’ve heard it all before. I know.

There’s no way I could miss a What I Ate Wednesday, though! Jenn always hosts such a cool party, it would just be a sin.

I’m happy to report that my goal from last week went well. Yay! I drank more water (and oodles of tea) last week. I’m going to set the same goal this week. More water = happier me. Plus it makes me feel less tired. Necessary.

Here’s some eats from the past couple of days:

A weird new favorite of mine. This is a mahi mahi burger, topped with an incredibly loosey goosey egg. Some may think it’s a strange combo. I like it. I had this for lunch on Monday, with some carrots, edamame, watermelon, and a banana. Of course, I didn’t take pictures of the wonderfully colorful food ;) yeesh.

Tea. All kinds of tea. This was blueberry, sipped on while I edited video at work. Oh, and that mug? It’s like the size of my head. That’s why I need two bags. I make less trips for refills that way.

I had a busy night on Monday. There was a big crisis where I live and I wanted to be on the ball with updating our work’s Twitter account throughout the evening. I was glued to my computer, and forgot about eating until 7:00 (I know … how did I DO THAT?). I quickly grilled a chicken breast, added an entire raw yellow bell pepper and some roasted red pepper/feta dressing. I’m sure it was delicious, but I ate it so fast that I don’t remember tasting it.

Then I mauled like 30 mini carrots. That happens regularly.

This happened yesterday:

Yes, that’s a lap filled with cheese. For the new TV series I’m working on, I was required to do a shoot at a local cheese factory (an incredibly cool experience, by the way). They sent my camera person and I home with five different types of gouda + two types of feta. And that is one of the many reasons why I love my job.

… I also ate a whole bunch of gouda back at the office. Gave me a tummy ache. WORTH IT.

Sometimes A Girl Just Wants A Sandwich

Hi there! It’s time for another edition of What I Ate Wednesday, hosted by the wonderful Jenn at Peas and Crayons. This month is all about sensible snacking … and while I’m not a huge snacker, one of my meals on Monday (the day I’m featuring in today’s post) felt like one giant snack fest.

Monday’s breakfast:

I tried something new! I guess I could count this as achieving one of my goals for June, but it’s not much of a recipe, so I’m not sure if I will or not. I made egg white oats, after my sister raved about it to me on the weekend. I cooked 1/2 cup of oats (with just over 1 cup of water) in the microwave, and then stirred in 2 egg whites before microwaving for another 45 seconds. Then I stirred in a spoonful of chocolate protein powder, and kah blam, a protein packed breakfast. And so voluminous with the egg whites in there! This will be making regular appearances. I had it on Tuesday, too :)

Monday’s lunch:

This is the snacky meal I mentioned earlier. I wanted so many different things, so I just piled ‘em all onto one plate. I microwaved a sweet potato, and since I couldn’t decided toppings, I covered one half with plain Greek yogurt and the other half with crunchy peanut butter (I’m so glad I finally decided to try that combo one day). With that, I had a handful of carrots with this fabulous new Greek yogurt dip I found, and some cherries. I always know summer has officially arrived when I can start buying cherries again!

Monday’s supper:

I had half of a spaghetti squash sitting in my fridge, and that was the plan for dinner. But … sometimes a girl just wants a sandwich. And that’s what this girl was craving for dinner when she walked in the door after work. It had been a hot day, so I wanted something cold and quick. In that tomato tortilla is two eggs (with a little bit of cheese), sliced turkey breast, and a bit cream cheese as the glue to hold it all together. I had some steamed veggies on the side with mustard on top. It looks a little gross … you make think it’s a little gross … but I do it all the time!

An Outdoor WIAW

Iced coffee, less blow dryer usage, flip flops, driving with the window down, patios…

I LOVE THIS WEATHER.

This week’s What I Ate Wednesday, presented by the lovely Jenn at Peas and Crayons, was eaten almost entirely outside.

I’ve been impatiently waiting for the warm weather to arrive. It finally got here on the weekend and I took full advantage.

Morning snack:

I don’t usually eat before I go to the gym. I know, not the best habit. But either I feel sick when I do that or I’d have to wake up at 4AM for the meal to digest enough before I head to the gym. But Sunday morning (the day I’m featuring in today’s post) I woke up starving. I needed a little somethin’ somethin’ before I left for my workout. So I had an apple and a clementine – so cute – on my balcony.

Breakfast:

After completing a hilly 8 mile stationary bike ride and lots of arm work (read: I felt like jello with a heartbeat), I made breakfast. I used two Nature’s Path Flax Plus with Figs waffles, topped with sliced turkey and poached eggs. If given the choice, I will always pick the style of egg with the runniest yolk. Poached, sunny side up, over easy. If the yolk runs, I’m in :) I took advantage of the weather again and ate it on my balcony, with the latest issue of Cosmo alongside.

Lunch:

Lunch was quick and easy. I whipped up a simple tuna salad (tuna + Greek yogurt), and then added sliced green pepper and nutritional yeast. I threw it all into a spinach tortilla, and taaa daaa. I didn’t eat all of this outside … but I did wander outside while I was on my last couple of bites. It counts, right?

Midafternoon:

Up until Sunday, I hadn’t had Starbucks in months. Not sure why, I had just fallen out of the routine of going every Monday morning before work (a money saver, coincidentally). But after my massage appointment, I had an immense craving. Iced green tea, unsweetened. Venti. Delicious.

Supper:

And my last meal of the day on Sunday was eaten on a patio. I told you I was soaking up as much of the great outdoors as I could! I picked up one of my best friends and we headed to the only open patio in town. I had chicken taco salad with romaine lettuce, corn, black beans, tomatoes, green onions, cheddar and Monterey Jack. I think it was just a ranch dressing on top, but I don’t remember exactly. My friend had a pulled pork sandwich … he said it was good. I don’t even think I looked at his plate because I was starved. I had one focus, and one focus only. That salad. And it was good.
