Superhero Sunday

I usually like to have a relaxing Sunday before I kick off the work week. That wasn’t the case yesterday! Not. At. All.

I stayed in on Saturday night, lounged on the couch, watched my favorite hockey team and read a few magazines. It was some spectacular alone time, something I feel like I haven’t had much of lately. After such a low key evening, I woke up yesterday morning (after 10.5 hours of sleep, whaaaaat?!) and was ready to take on the day.

I downloaded a couple new episodes of the Josh and Ross podcast. If you’re a Chelsea Lately fan, I definitely recommend it. Those two are hilarious! I put my headphones in and before I knew it, I had spent two hours cleaning my apartment. I didn’t even know it needed two hours of dedicated time! ;)

Then I headed to the gym. Since I’ve been spending so much of my “exercise time” working on Zumba (only 8 days until I start teaching!!!!), I haven’t been there that often. I climbed 50 flights on the StairMaster, and then did a serious upper body workout. My shoulders were screamiiiiiiiiiing at me. Love that.

Then, after a long walk to Starbucks to have coffee with a couple of friends (it’s amazing how sleepy the fresh air made me on the walk home!), I tackled seven million a few loads of laundry. And prepped some food for the week! I’ve been getting into a habit of making a big pot of quinoa (I add it into soups/my daily breakfast wraps/whatever else happens to come along) and a pot of red lentils (I like adding them to soups and pasta) lately. It really makes my life easier during the week.

Then more Zumba prep! And finally, Girls.

What. A. Day. And incredibly active, when you consider gym + walk + Zumba. My to do list didn’t know what hit it (and yes, I make at least one to do list each day).

All Over The Place

Hi!

You are about to feast (see what I did there?) your eyes on another What I Ate Wednesday. Lucky you, right? :)

This month, the lovely Jenn’s theme is healthy snacks. I actually remembered to take pictures of snacks this week. And a whole bunch of other things I’ve eaten since Sunday, too. So this week’s WIAW isn’t focusing on one day of food. No, this post is all over the place. Here we go!

Chicken breast + roasted veggies + peanut butter toast, in front of last week’s episode of Teen Mom (can’t STAND Farrah):

A really gross photo of a sweet potato with peanut butter + tuna salad (made with Greek yogurt, of course):

Egg white oatmeal + chocolate protein powder + mango/berries:

Salmon fillet + roasted veggies, in front of Easy A (great movie, LOVE Emma Stone):

A whole wheat tortilla containing two eggs + chia seeds + cheese + lots and lots of pepper + turkey, with a banana + peanut butter:

A (very ugly) microwave egg puff, containing two eggs + chia seeds + lots of hot sauce (like, I drank 3 glasses of water after):

And the snacks! In the mix: carrots + jalapeno Greek yogurt dip (new obsession), carrot cake granola (!!!), dried mango slices, pistachios, and a white chocolate frappucino with raspberry syrup … which was delicious.

Impatient WIAW

It’s already Wednesday?! Yikes!

This week’s What I Ate Wednesday, brought to you by the lovely Jenn over at Peas and Crayons, is filled with eats from Monday.

I was impatient on Monday. I wanted quick. I wanted delicious. I wanted my food now. They say patience is a virtue? Pffffft.

Breakfast:

On a Monday mornings I want to spend as little time as possible in the kitchen, because, well … it’s Monday. I usually don’t get my butt in gear quick enough, so I don’t have a lot of time on Monday mornings anyway. This week I whipped up a bowl of oatmeal with chia seeds, chocolate protein powder and an apple. Then I read blogs while inhaling it. I don’t remember, but I can pretty much guarantee I spilled on my keyboard. That happens regularly.

Morning snack:

I would be super ashamed to find out how many of these crackers I ate at my desk while working. See guys, THIS is why you portion stuff out. Don’t just dig in the box while you type. Or you’ll feel like you’re going to turn into a cracker like I did on Monday. I took this box to work (leftover from my sangria/snackfest on Saturday) to share with my coworkers. We all share our food, all the time. Except I didn’t share these. Whoopsie.

Lunch:

The ultimate convenience and solution for impatience is take out soup. It’s actually a fun story … my friend/coworker and I went to a local cafe for supper on Friday and had this coconut chicken curry soup. It was the soup of the day, and it may have been the best thing I’ve ever eaten. We started talking about it (reliving the magic) around lunchtime on Monday, and wondered what the odds were that they were serving it again. One phone call later, I was one happy camper. It was deliciously spicy, and this was about when my sore throat started to show up. Soup is great when you’re sick. Spicy is also great when you’re sick. This was obviously a fantastic decision. I paired it with a vanilla rooibos tea latte from Starbucks.

Supper:

I felt like crap for supper. I knew I needed to jam as many nutrients into me as possible if I was going to beat the bug that was threatening my immune system (it’s still there today, but I’m a lot better). This meant filling half of a plate with assorted veggies (microwave = my friend), and eating a protein packed wrap. That whole wheat tortilla housed two eggs, chia seeds, two Jamie Eason turkey muffins, yellow peppers, spinach, and a light little smear of leftover Boursin cheese (again, from the sangria/snacking session on Saturday).

Dessert/snack I inhaled before falling asleep on the couch:

So much happiness in one bowl. I wanted more fruit (hello, vitamin C). With chocolate. And peanut butter. And yogurt. I listened to my cravings and piled not one, but two apples in a bowl. On top of that went some carob chips, blueberry Greek yogurt, crunchy peanut butter, and golden raisins. I ate it, and my sick body decided to fall asleep at 7:45. I even missed Gossip Girl. That tells you how gross I was actually feeling.

An Outdoor WIAW

Iced coffee, less blow dryer usage, flip flops, driving with the window down, patios…

I LOVE THIS WEATHER.

This week’s What I Ate Wednesday, presented by the lovely Jenn at Peas and Crayons, was eaten almost entirely outside.

I’ve been impatiently waiting for the warm weather to arrive. It finally got here on the weekend and I took full advantage.

Morning snack:

I don’t usually eat before I go to the gym. I know, not the best habit. But either I feel sick when I do that or I’d have to wake up at 4AM for the meal to digest enough before I head to the gym. But Sunday morning (the day I’m featuring in today’s post) I woke up starving. I needed a little somethin’ somethin’ before I left for my workout. So I had an apple and a clementine – so cute – on my balcony.

Breakfast:

After completing a hilly 8 mile stationary bike ride and lots of arm work (read: I felt like jello with a heartbeat), I made breakfast. I used two Nature’s Path Flax Plus with Figs waffles, topped with sliced turkey and poached eggs. If given the choice, I will always pick the style of egg with the runniest yolk. Poached, sunny side up, over easy. If the yolk runs, I’m in :) I took advantage of the weather again and ate it on my balcony, with the latest issue of Cosmo alongside.

Lunch:

Lunch was quick and easy. I whipped up a simple tuna salad (tuna + Greek yogurt), and then added sliced green pepper and nutritional yeast. I threw it all into a spinach tortilla, and taaa daaa. I didn’t eat all of this outside … but I did wander outside while I was on my last couple of bites. It counts, right?

Midafternoon:

Up until Sunday, I hadn’t had Starbucks in months. Not sure why, I had just fallen out of the routine of going every Monday morning before work (a money saver, coincidentally). But after my massage appointment, I had an immense craving. Iced green tea, unsweetened. Venti. Delicious.

Supper:

And my last meal of the day on Sunday was eaten on a patio. I told you I was soaking up as much of the great outdoors as I could! I picked up one of my best friends and we headed to the only open patio in town. I had chicken taco salad with romaine lettuce, corn, black beans, tomatoes, green onions, cheddar and Monterey Jack. I think it was just a ranch dressing on top, but I don’t remember exactly. My friend had a pulled pork sandwich … he said it was good. I don’t even think I looked at his plate because I was starved. I had one focus, and one focus only. That salad. And it was good.
