WIAW: Summer Staples!

Oh, hello. Didn’t see you there :)

Happy Wednesday! It’s What I Ate Wednesday time (thanks Jenn!) and I’m so ready to drool over everyone’s posts. So. Ready.

(*cue today’s pictures that decided to hang out in the left column instead of going over to the centre of the post. UGH.*)

I love this month’s theme! This week’s post is a little bit all over the place, I couldn’t possibly remember to take photos everyday … but I think there are a few summer staples in there!

Pizza. That’s obviously a summer staple, right? I pulled out my countertop pizza maker and made this one with a whole wheat tortilla, organic tomato sauce, broccoli, corn, black beans, green peppers, and feta. Olives would have been the perfect addition … but I was out. Oh well! This was still delicious – and packed with nutrients!

Pita Pit shouldn’t be considered a staple, but eating outside during the summer certainly should be! I grabbed this 6″ whole wheat pita for lunch the other day and enjoyed it at a picnic table at work. In there: turkey, lettuce, onion, cucumbers, green olives, black olives, pineapple, alfalfa sprouts, mushrooms, tomatoes, feta cheese, and tzatziki. My friends always make fun of me because I get every vegetable available, and as a result, spill all over myself while I eat. This was no different.

Eggs aren’t a summer staple. For me, they’re a daily staple. Honestly. I’ve actually considered the fact that I could turn into a chicken one day. Here’s two poached eggs on some whole grain bread (I rarely use toast for poached eggs), sliced turkey breast and MacLaren’s Imperial Sharp Cheese (MY FAVORITE!).

A small bowl of various whole wheat pastas (aka the end of several bags), organic tomato sauce, and a grilled chicken breast. Not very summer staple-y. But still delicious.

And the creme de la creme of summer staples … I present frozen yogurt. I had a crappola day at work yesterday (involving falling down some stairs oh so ungracefully), and decided this was necessary. In there: Red Velvet/New York Cheesecake, strawberries, crumbled Coffee Crisp, chocolate chips, and maraschino cherries. It was an emotional eating fest. And I wanted it that way ;)

Done! Oh, how I love Wednesdays. Can’t wait to check out some other WIAW posts later on today!

An Unclassy WIAW

Hey hey hey! I love that it’s Wednesday. I’d love it more if it was Friday … but hey, this will do :)

As always, a big “thanks darlin!” goes out to Jenn over at Peas and Crayons for hosting What I Ate Wednesday. It’s one of my favorite blogging parts of the week!

This is what I ate on Monday, June 4. (I originally typed May there. Someone needs to catch up and figure out what month it is!)

Breakfast:

This has been a regular menu item recently. I had two poached eggs on top of a multigrain bagel thin. This week’s had a light layer of cream cheese for some extra ooomph on a sleepy Monday morning. For those of you who have asked … the reason I can get the eggs so perfectly symmetrical (a bonus for someone with slight OCD) is because I have an egg poacher. It’s probably one of the best things that has ever happened to me. I had a glass of orange juice on the side. Random fact: whenever I see a picture of someone’s breakfast with a glass of OJ on the side, I automatically hear an announcer’s voice saying “as part of a balanced breakfast” like they used to say in sugary cereal TV commercials. Weird, I know.

Lunch:

Usually I would have some sort of a snack in the middle of the morning, or at least a cup or two of David’s Tea at work, but on Monday I didn’t have anything! Strange. I came home for lunch and whipped up a tuna salad wrap. I mixed canned light tuna (packed in water) with some Greek yogurt, threw in some shredded cheese, and put it into a whole wheat tortilla. I added some color (and veggies!) with carrots on the side.

Supper:

Supper was incredibly unclassy. I ate it out of a large measuring cup. As you can see, it was perfect for hanging onto while watching TV from the comfort of my couch. In my sweats. I’m a real class act. Sorry I’m not sorry. It’s a little tough to see what’s in the measuring cup … so here’s the explanation. I started off with toasted buckwheat (my first time making it!), then added steamed brussel sprouts, edamame, grilled chicken breast, and a dollop of my usual Greek yogurt. I mixed it all up and it looked really disgusting. But it really hit the spot! Even if it was in the lamest dish I own ;) I really did have normal plates and bowls. But I chose the measuring cup. Do you ever eat your meals out of weird dishes? When I used to make Kraft Dinner back in the day, I ate it right out of the pot…

That’s another WIAW in the books. There’s not a lot of vegetables in there, I realize. Whoops. Next time? :)

An Outdoor WIAW

Iced coffee, less blow dryer usage, flip flops, driving with the window down, patios…

I LOVE THIS WEATHER.

This week’s What I Ate Wednesday, presented by the lovely Jenn at Peas and Crayons, was eaten almost entirely outside.

I’ve been impatiently waiting for the warm weather to arrive. It finally got here on the weekend and I took full advantage.

Morning snack:

I don’t usually eat before I go to the gym. I know, not the best habit. But either I feel sick when I do that or I’d have to wake up at 4AM for the meal to digest enough before I head to the gym. But Sunday morning (the day I’m featuring in today’s post) I woke up starving. I needed a little somethin’ somethin’ before I left for my workout. So I had an apple and a clementine – so cute – on my balcony.

Breakfast:

After completing a hilly 8 mile stationary bike ride and lots of arm work (read: I felt like jello with a heartbeat), I made breakfast. I used two Nature’s Path Flax Plus with Figs waffles, topped with sliced turkey and poached eggs. If given the choice, I will always pick the style of egg with the runniest yolk. Poached, sunny side up, over easy. If the yolk runs, I’m in :) I took advantage of the weather again and ate it on my balcony, with the latest issue of Cosmo alongside.

Lunch:

Lunch was quick and easy. I whipped up a simple tuna salad (tuna + Greek yogurt), and then added sliced green pepper and nutritional yeast. I threw it all into a spinach tortilla, and taaa daaa. I didn’t eat all of this outside … but I did wander outside while I was on my last couple of bites. It counts, right?

Midafternoon:

Up until Sunday, I hadn’t had Starbucks in months. Not sure why, I had just fallen out of the routine of going every Monday morning before work (a money saver, coincidentally). But after my massage appointment, I had an immense craving. Iced green tea, unsweetened. Venti. Delicious.

Supper:

And my last meal of the day on Sunday was eaten on a patio. I told you I was soaking up as much of the great outdoors as I could! I picked up one of my best friends and we headed to the only open patio in town. I had chicken taco salad with romaine lettuce, corn, black beans, tomatoes, green onions, cheddar and Monterey Jack. I think it was just a ranch dressing on top, but I don’t remember exactly. My friend had a pulled pork sandwich … he said it was good. I don’t even think I looked at his plate because I was starved. I had one focus, and one focus only. That salad. And it was good.
