Hiiiii! Happy What I Ate Wednesday!

Isn’t Jenn just fabulous for hosting this weekly link up? I can’t tell you how much I like drooling over reading everyone’s posts each week!

I was feeling the need for some comfort food on Monday. But I see comfort food several different ways. I’m not just your typical mac and cheese, mashed potato, soup kind of comfort food girl. I had three different bowls of comforting food to start the week. Come to think of it … maybe I just deem food “comfortable” if it’s in a bowl? ;)

Anyway …

Breakfast:

I started the day with some sweet comfort. This is one of my favorite breakfasts … it tastes like dessert! This was oatmeal + chocolate protein powder + chia seeds + crunchy (can’t be smooth!) peanut butter. Delicious!

Lunch:

My second meal was a spicy kind of comfort. This was egg whites (couldn’t tell you how many, I just dumped) + green peppers + jalapenos + black beans + Wholly salsa. My mouth was a touch on fire. But I liked it ;)

Snack:

My man friend gave me Dunkaroos. How great are they, am I right?! I almost never got these as a kid because they’re definitely not the healthiest snack. This one was the kind with the rainbow icing. What a great part of my afternoon!

Supper:

This was a stick to my ribs kind of comfort (see what I mean? I can classify almost anything as comfort food). This is actually one of my favorite comfort foods … I think it’s the texture of the lentils. I love, love, love them. Weirdo, right? ;) This was quinoa + grilled chicken + red lentils. After the photo, I threw some salsa + roasted red pepper hummus on top. Devoured.

Jealous WIAW

Happy Independence Day to all of my American readers! I hope you all have a wonderful day full of celebrating with friends and family. But you should know I’m crazy jealous if you have today off of work. I know Canada Day was just on Sunday, and we had Monday off in lieu, but still. Jealous ;)

It’s What I Ate Wednesday time!

As always, a big thanks to Jenn for hosting this weekly party. Here’s what I ate yesterday!

I needed to be at work early yesterday morning, so I threw together a quick breakfast wrap. That whole wheat tortilla (which I think I eat 100 of per week, not the greatest habit) contains two eggs with a little bit of cheese, a Sol Cuisine mushroom rice burger, a smear of cream cheese and lots and lots of pepper!

Unexpectedly, I was able to run home for my lunch break. I thought I was going to be far too busy for that, so that was a welcome surprise! I whipped up a bowl of oatmeal, stirred in chocolate protein powder, and added just thawed out berries and mango pieces. I love when they’re just on the warm side of being frozen (does that makes sense?) … I don’t know why.

I also consumed waaaaaay too much of this after I emptied that bowl.

Supper was delicious! Underneath all of that grilled chicken breast, steamed peppers, onions, and brussel sprouts is bulgur. It’s one of my new favorite grains! Have you ever tried it? I really like the texture. Oh, and that’s Greek yogurt thrown on top … because that’s just what I do ;)

This is my new favorite snack. This isn’t exactly what I had last night, this is a picture from a few days ago. In there is 7000 grapes, a peach, Greek yogurt, and a spoonful of crunch peanut butter. Mix it all up and you’ve got pure happiness.

Strange Schedule – WIAW

Hey guys! I can’t believe it’s Wednesday already. Not that I’m complaining or anything ;)

As always, the lovely Jenn at Peas and Crayons is throwing the stellar What I Ate Wednesday food party in the blogsphere today. It’s one of my favorite parts of the week!

The food featured in today’s post is from Monday, in which I had the day off :) Hallelujah for long weekends! I reallllllly needed to catch up on sleep, so I didn’t get out of bed until 10:30 that morning. As a result, my meals were a little off schedule.

Breakfast:

I hadn’t been to the gym in a couple of days, so I did a 2 mile run and a 3 mile bike ride once I rolled off of the pillow. Schweaty. This bowl of oatmeal really hit the spot afterwards. I topped it with a spoonful of crunchy peanut butter (of course!), chia seeds, and defrosted frozen berries. I love using thawed out berries, because there is that extra delicious juice to use too. And I had a big ol’ glass of milk on the side.

Lunch:

Since breakfast was so late (like almost noon … eeek!), lunch didn’t happen until about 3:30. Just prior to my nap. Honestly, I love long weekends. This wrap was so big I had to hold it together in order to photograph it. Not that I’m complaining :) In there: spinach, yellow bell pepper, shredded cheese, deli turkey, and mustard.

Supper:

Sometimes I think breakfast for supper tastes better than breakfast for breakfast. You following me? This was two Nature’s Path Hemp Plus waffles, each topped with a poached egg. Plus half of a cantaloupe. That’s a serving, right?

Nighttime snack:

I had a handful of carrots and hummus while I did some blog work before bed. That made for some lovely breath. Terrible idea.

Impatient WIAW

It’s already Wednesday?! Yikes!

This week’s What I Ate Wednesday, brought to you by the lovely Jenn over at Peas and Crayons, is filled with eats from Monday.

I was impatient on Monday. I wanted quick. I wanted delicious. I wanted my food now. They say patience is a virtue? Pffffft.

Breakfast:

On a Monday mornings I want to spend as little time as possible in the kitchen, because, well … it’s Monday. I usually don’t get my butt in gear quick enough, so I don’t have a lot of time on Monday mornings anyway. This week I whipped up a bowl of oatmeal with chia seeds, chocolate protein powder and an apple. Then I read blogs while inhaling it. I don’t remember, but I can pretty much guarantee I spilled on my keyboard. That happens regularly.

Morning snack:

I would be super ashamed to find out how many of these crackers I ate at my desk while working. See guys, THIS is why you portion stuff out. Don’t just dig in the box while you type. Or you’ll feel like you’re going to turn into a cracker like I did on Monday. I took this box to work (leftover from my sangria/snackfest on Saturday) to share with my coworkers. We all share our food, all the time. Except I didn’t share these. Whoopsie.

Lunch:

The ultimate convenience and solution for impatience is take out soup. It’s actually a fun story … my friend/coworker and I went to a local cafe for supper on Friday and had this coconut chicken curry soup. It was the soup of the day, and it may have been the best thing I’ve ever eaten. We started talking about it (reliving the magic) around lunchtime on Monday, and wondered what the odds were that they were serving it again. One phone call later, I was one happy camper. It was deliciously spicy, and this was about when my sore throat started to show up. Soup is great when you’re sick. Spicy is also great when you’re sick. This was obviously a fantastic decision. I paired it with a vanilla rooibos tea latte from Starbucks.

Supper:

I felt like crap for supper. I knew I needed to jam as many nutrients into me as possible if I was going to beat the bug that was threatening my immune system (it’s still there today, but I’m a lot better). This meant filling half of a plate with assorted veggies (microwave = my friend), and eating a protein packed wrap. That whole wheat tortilla housed two eggs, chia seeds, two Jamie Eason turkey muffins, yellow peppers, spinach, and a light little smear of leftover Boursin cheese (again, from the sangria/snacking session on Saturday).

Dessert/snack I inhaled before falling asleep on the couch:

So much happiness in one bowl. I wanted more fruit (hello, vitamin C). With chocolate. And peanut butter. And yogurt. I listened to my cravings and piled not one, but two apples in a bowl. On top of that went some carob chips, blueberry Greek yogurt, crunchy peanut butter, and golden raisins. I ate it, and my sick body decided to fall asleep at 7:45. I even missed Gossip Girl. That tells you how gross I was actually feeling.

Enjoy your day! I’m going to check out some other beautiful WIAW’s … but never when I’m hungry. That just makes it worse ;)
