It’s Wednesday up in hereeeee! Hi everyone :)

A big thank you to Jenn over at Peas and Crayons for hosting the always fabulous What I Ate Wednesday. I don’t know how many of my eats are spoooooky, but here goes!

Yolk porn. Duh. This wouldn’t be a WIAW post without it. I’m not usually a savoury oats kind of person, but this breakfast really hit the spot a couple of days ago. Yolk makes things better. That should be added to the constitution or the bible or something.

Pumpkin seeds (with a side of Cosmo magazine). ‘Tis the season? These are like crack.

I just love all things Bolthouse Farms. This juice is no exception. Have you ever tried any of their products? Love. Them. All.

Another breakfast wrap. This is who I am, everyone! This whole wheat tortilla has two eggs, a smear of cream cheese, chia seeds, bell peppers, and salsa.

I’m all about snack plates for lunch. I’m too indecisive to pick one item to eat! This bad boy had a banana, fieldberry greek yogurt, carrots, bell peppers, and mini turkey meatballs. A wonderful combination (and ohhhh so colorful!).

Another WIAW in the books. I missed last week’s regular shindig (a travesty!), so I’m glad to take part again this week :) Enjoy your day!


When I Remember

Happy Wednesday! I am truly happy that it is Wednesday … the week is half over. Hallelujah. I’m wishing for the weekend even more than usual ;)

Thank heavens for What I Ate Wednesday (kudos to Jenn for it). Such a nice lil’ thing in the middle of the week! I’m sticking with the same goal I had all month. Judge me for being boring and predictable, I dare you. I’m still going to pledge to drink more water. I’ve been doing pretty well … let’s see if I can keep it up!

Here’s some sporadic dishes from the last several days. I’ve said it before … I can NEVER remember to photograph an entire day of meals. Sooooo here’s food from when I remember (really setting this up well, aren’t I?).

Salad time! This was chick peas + black beans + edamame + chicken breast + green beans + assorted bell peppers. I topped it with roasted red pepper hummus (my official sponsor) and Greek yogurt (the key ingredient in everything I eat).

That combo made a terrific dressing! I will definitely be repeating that!

I forgot about a container of raspberries I bought at Costco last week (a travesty, right?) and they got really ripe and soft. So I mixed them in with Greek yogurt (whoop, there it is!) and my favorite protein powder, Jillian Michaels chocolate whey. Is there such thing as a chocolate marshmallow? If there is, that’s how I would describe the taste of the powder. I go through it soooo fast. This was a fantastic snack!

Breakfast wrap! A regular thing on YHG. This was two eggs + sliced turkey breast + roasted red pepper hummus (what did I tell you?) in a whole wheat wrap. I think I finished eating this on my way to work. Shocking, I was running late.

Mixed veggies + a baked sweet potato + ground turkey + lots and lots and lots of feta. I thought I might need dressing for this, but the warm potato and turkey made the feta creamy enough that everything had an even salty flavour. Apparently I don’t believe in real dishes this week either. Hello, Tupperware :)

A new addition to my breakfast menu! For the first time in days weeks months, I didn’t have oatmeal or a breakfast wrap. I whipped up a quick protein cake in the microwave and topped each half with Greek yogurt and the aforementioned raspberries. The cake recipe? 1/4 cup of oats + 1 egg + 3/4 scoop chocolate protein powder + splash of water. I microwaved the mug for just over a minute and taaaa daaaah! I rubbed the inside of the mug with coconut oil so it would come out easier :)

Am I Greek?

No, I am not. Although I’d like to have the skin tone. The true question here is … can you ever have too much Greek yogurt?

Apparently, I don’t think so. Today’s What I Ate Wednesday post is 95% filled with the creamy goodness.

Thanks to Jenn for hosting WIAW! I’m still loving the habits/goals theme for this month. I’ve been doing well with drinking more water, so I’m going to stick with it for this week’s goal. I’m sorry I’m boring. Why mess up something good?

I can never seem to remember to take photos of food for an entire day (sometimes I swear I have the focus of a goldfish), so here’s some sporadic food photos from the past several days:

Overnight oats, eaten while catching up on blogs before work. A regular thing. This bowl contained oats, Greek yogurt, milk, chocolate protein powder, and flax seed oil. I topped it with a nectarine, and it kept me full for hours. That’s no small feat.

Subway. This was turkey + swiss + every vegetable they have. I swear I’m having a midlife crisis … I’ve ordered something different the last few times I’ve visited the restaurant. WHO AM I?

Peanut butter + a banana + a nectarine + more Greek yogurt!

This dinner hit the spot … and then made me fall asleep immediately. So it’s officially a winner ;) Haha! This was bulgur (I like the “stick to your ribs” feel) with a grilled chicken breast and black beans/edamame. Delicious!

… and then I added Greek yogurt on top, because that’s just what I do.

This is a new snack for me, and it’s incredibly dangerous delicious. Baked lentil chips + roasted red pepper hummus. I’ve had the hummus oodles of times before, but picked up the chips during a quick trip to Costco this week. Ohhhh mama. They’re incredible. Portioning out is so necessary.

Another yogurt bowl. A nectarine (how many of those have I been eating?!) + chocolate protein powder + peanut butter + the always present Greek yogurt!

First Fall WIAW

Hello, fall! And all you Yellow Haired Girl readers, of course ;)

Happy What I Ate Wednesday!

I’m loving this month’s theme. Jenn, you rock. All the WIAW posts for September (and there’s gonna be a lot of ‘em!) are going to be focussed on making goals. The one I chose to tackle this week: drink more water. I made this goal last month, and sucked. Biiiiiig time. But maybe if I take it a week at a time I’ll see better success? I’ll let you know how I did next Wednesday :)

Now, onto the food! Here’s some of the goodies I’ve been chowing down on lately:

Two eggs + half of a red bell pepper + whole wheat tortilla. Bam! Easy breakfast.

I’m getting back into the habit of drinking hot coffee … I guess that’ll happen when fall shows it’s face, hey?

Inhaled at 11PM, after a long (but fabulous) holiday Monday. Blueberries, Greek yogurt, crumbs from various granola bags, and organic crunchy peanut butter.

Mexican, anyone? Vegetarian enchilada in a whole wheat tortilla, paired with rice and black beans. And that salad? That’s cilantro ranch on there. Delicious.

Pancake breakfast at work for the win. I don’t know what coworker brought blueberries in for the occasion, but I love them.

This is a new favorite of mine! I’ve been eating it all the time. There’s a mashed yam underneath all of that yolky goodness. I put two loosey goosey eggs on top of the yam, messed it all up, and squirted some hot sauce all over it. Excellent combination.

I miss going back to school (read: huge nerd), and consoled myself on Tuesday by preparing a very “school-y” lunch. That’s tuna salad (canned tuna + Greek yogurt) with two pickles on top, in between two pieces of 12 grain bread. And a boatload of grapes on the side.

WIAW From Work

Hey guys! First off, I want to apologize. My internet has been kind of on the fritz lately and I haven’t been able to read/comment on my fave blogs (and I have a lot of ‘em!). I’m hoping things will be back to normal soon … but for now, he’s here another post quickly written at my desk at work. Whoops. Don’t tell on me ;) (also … the “N” key keeps sticking on my keyboard!).

Happy What I Ate Wednesday! Jenn is seriously the best … I love this day. Thanks for hosting this, girl!

The pictures for this week’s post aren’t from a single day. And none of them are particularly good looking. Yummy food isn’t always purrrrty!

Snack time! Inhaled in front of Chelsea Lately (love that woman). Greek yogurt with a scoop of chocolate protein powder stirred in, plus a generous handful of Love Crunch Dark Chocolate and Red Berries.

Lunch! This was an easy tuna salad, made with a can of the fishy stuff + Greek yogurt, and plopped into a whole wheat tortilla. I added lettuce for some special crunch. The moral of the last two pictures? Greek yogurt is definitely a summer staple. And a spring/fall/winter staple, too.

Look ma, more Greek yogurt! The lovely people at Vega sent me some smoothie packs a little while ago, and I’ve slowly been picking away at them. I’ll be reviewing them soon :) This yummy drink included chocolate almond milk, Greek yogurt, and a package of Vanilla Almondilla (love the name!). A great way to kick off the day!

A Clif bar, inhaled during the Closing Ceremony on Sunday. Can you see Victoria Beckham in the background? And my terribly white leg in the foreground? ;)

A quick dinner on Monday night. Whole wheat macaroni + Mahi Mahi burger + edamame. A weird combo, but it did the trick. I ended up really enjoying it. Sometimes the best meals are the ones where you throw a schwack of stuff into a bowl and call it supper!

An Unclassy WIAW

Hey hey hey! I love that it’s Wednesday. I’d love it more if it was Friday … but hey, this will do :)

As always, a big “thanks darlin!” goes out to Jenn over at Peas and Crayons for hosting What I Ate Wednesday. It’s one of my favorite blogging parts of the week!

This is what I ate on Monday, June 4. (I originally typed May there. Someone needs to catch up and figure out what month it is!)

Breakfast:

This has been a regular menu item recently. I had two poached eggs on top of a multigrain bagel thin. This week’s had a light layer of cream cheese for some extra ooomph on a sleepy Monday morning. For those of you who have asked … the reason I can get the eggs so perfectly symmetrical (a bonus for someone with slight OCD) is because I have an egg poacher. It’s probably one of the best things that has ever happened to me. I had a glass of orange juice on the side. Random fact: whenever I see a picture of someone’s breakfast with a glass of OJ on the side, I automatically hear an announcer’s voice saying “as part of a balanced breakfast” like they used to say in sugary cereal TV commercials. Weird, I know.

Lunch:

Usually I would have some sort of a snack in the middle of the morning, or at least a cup or two of David’s Tea at work, but on Monday I didn’t have anything! Strange. I came home for lunch and whipped up a tuna salad wrap. I mixed canned light tuna (packed in water) with some Greek yogurt, threw in some shredded cheese, and put it into a whole wheat tortilla. I added some color (and veggies!) with carrots on the side.

Supper:

Supper was incredibly unclassy. I ate it out of a large measuring cup. As you can see, it was perfect for hanging onto while watching TV from the comfort of my couch. In my sweats. I’m a real class act. Sorry I’m not sorry. It’s a little tough to see what’s in the measuring cup … so here’s the explanation. I started off with toasted buckwheat (my first time making it!), then added steamed brussel sprouts, edamame, grilled chicken breast, and a dollop of my usual Greek yogurt. I mixed it all up and it looked really disgusting. But it really hit the spot! Even if it was in the lamest dish I own ;) I really did have normal plates and bowls. But I chose the measuring cup. Do you ever eat your meals out of weird dishes? When I used to make Kraft Dinner back in the day, I ate it right out of the pot…

That’s another WIAW in the books. There’s not a lot of vegetables in there, I realize. Whoops. Next time? :)

The Goods

Yesterday was crazy town. I was really busy … doing terribly unexciting things. I spent hours doing laundry. I had let the pile build up for a couple of weeks. I have too many clothes, so I can let that happen. A blessing and a curse.

Laundry doing just screams glamour, right?

Then, task number two: grocery shopping. Pretty sure I had left shopping longer than I had left the laundry. So there’s your indication of the length of my list. I needed to get on track. Ghosts were living in my refrigerator.

I took my massive grocery list to the store. And when I say store, I actually mean four different stores. Does everyone go to a hundred different places like I do?

Usually I LOVE grocery shopping. I love writing the list, I love looking at different items in the store, I love taking my time, I love it all. Not yesterday. No ma’am. I didn’t want to. But if I wanted to eat today/the rest of the week, it was necessary.

So I went. But I wasn’t happy about it.

But I’m happy now! Here’s some of the goods:

Buying in bulk, baby! Oats, quinoa, bulgur, brown rice penne, nutritional yeast, lentils, beans ...

That’s just a sneak peek of some of the goods. Oh, and those three tubs of greek yogurt? They’ll be gone by Saturday. I have no self control when it comes to that creamy, delectable goodness. I put it in every meal.

As much as shopping sucked with a capital S (seriously … screaming children in every single aisle), I’m relieved to have food in my cupboards/fridge/freezer again.

The problem now, though? Too many options! I don’t know what to cook today!
