I know I’m six days late to the conversation … but it’s November already? Crikey.
I didn’t truly realize it was a new month until I realized we no longer have a spooky theme for What I Ate Wednesday! Thanks Jenn, btw. You’re the greatest!
The snack I have far too often. Crunchy peanut butter is a necessity. Also, how good do my fingernails look?
I met my family for my sister’s birthday dinner on Sunday. Chicken taco salad, loaded with veggies and black beans. This was in a edible taco shell … with zero nutritional benefits. #soworthit
The wrap I have at least
twice once a day. Terrible picture. Whole wheat tortilla + two eggs + chia seeds + turkey breast + dill cream cheese (a new favorite!) + roasted red pepper hummus. De-freaking-licious.
My mom gave me a bunch of apples, in addition to the bananas and peaches I already have waiting for me. What does that mean? TWO fruit bowls, ladies and gentlemen. Exciting stuff I’m going to turn into a piece of fruit soon. And yes, that’s a bowl of pumpkin seeds.
I tried out this recipe on Monday when I took the day off of work. Chicken tortilla soup = SO GOOD. I made a couple of tweaks, like using Greek yogurt instead of sour cream, and used a substitution for Ro-Tel when I couldn’t find any (and also realized I’m not entirely sure I know what it is). I used lentil chips instead of tortilla chips, too. I will be making this again. Possibly even by next week.
This is a new drink I’ve been gulping. Apple juice + apple cider vinegar. I’ve been reading about the benefits of ACV lately, and decided to give it a try. I guess we’ll see if I turn into a superhuman. I’ll keep you posted.
Have you ever tried apple cider vinegar? Whatcha think?
