Happy Halloween!

Happy Halloween! Are you dressing up today? I sure am :) I have my red crayon costume all ready to go at work today!

Happy What I Ate Wednesday, too! What a fabulous day, right (thanks Jenn!)? If you were to judge my life according to this week’s post … it appears I eat nothing but eggs, squash, and bulgur wheat.

Actually, that is about all I eat ;) so judge away!

Spaghetti squash + two poached eggs. I’m pretty sure I ate this at like 9:00 one night, because I fell asleep on the couch as soon I walked in the door from work. Delicious regardless of mealtime!

I mentioned this one earlier this week. Scrambled eggs + Wholly salsa. Heaven, garlicky salsa heaven. I’m pretty sure I smelled like garlic for three days. Not a problem my friends. Not. A. Problem.

Supper on Monday night was super satisfying. Bulgur wheat + salsa (apparently I eat a lot of that, too) + chia seeds (a lot of them!) + grilled chicken breast + feta.

I ran out of oats this week, so I used leftover bulgur for an experiemental Tuesday morning breakfast. I heated the leftovers up, added a bit of milk, a scoop of my favorite chocolate protein powder, and peanut butter. This tasted like dessert. Success!

Carrots. So, so, so many carrots. Do you snack while you cook? I realized this week that I eat about 20 carrots while I cook lunch and supper. I have to have a bag on hand!

Yesterday’s lunch was a strange one, but I loved it. I scrambled three eggs, added about 3/4 cup of leftover spaghetti squash, salsa, hot sauce, and Summer Fresh’s greek yogurt artichoke and asiago dip.

Have a wonderful day! Any special Halloween plans? I’m throwing on my crayon costume and piling my plate hiiiiigh at our work pot luck lunch. Then tonight? I agreed to watch scary movies with someone. Don’t ask me why. Stupidest thing I’ve ever done. I can’t even watch some of the shows on HBO … how on earth am I going to survive this evening?

  1. I have similar Halloween plans – watching scary TV and eating mini-chocolate bars. I’ll also be handing out candy. Good luck tonight… I find having a blanket to hide under helps too :)

  2. I found your blog via pbfingers and love it :) We have similar egg tooth and I will defenitely try your combinations! Halloween became popular in my country recently and I don‘t celabrate it but love to looks at pics after :)

  3. Wow, your eats look incredible. That dip on the eggs sounds so rad and the Wholly Guac salsa? I LOVE THAT STUFF. It’s just so fresh and not too watery like the Tostitos salsa. I swear I could never go back. Love the eggs and spaghetti squash combo. Great idea!
