Hello! It’s Wednesday … and since I decided to use some built up overtime hours and take Friday off, it’s my second last day of the work week! Wahoo
Before I get into today’s What I Ate Wednesday post, I wanted to say a big thank you to everyone who commented on yesterday’s post about dealing with stress. In addition to crying while on the phone with my mom (which I did for quite awhile last night), I have a lot of things to try! There were tips that I’ve done before and forgotten about (like taking 5-HTP or going for a walk) and things I’ve never tried but really want to (kickboxing and meditation). Thanks so much! I really appreciate all of your help!
Alright. It’s WIAW time. Thanks to Jenn for hosting this wonderful shin dig! These are my meals from Monday, Monday, Monday!
Breakfast:
I started off the work week with a massive bowl of overnight oats. I was so full after eating it. In the mix: chocolate almond milk, chocolate protein powder, cocoa powder, oats (duh), plain Greek yogurt, and chia seeds. I topped it with crunchy peanut butter, and enjoyed a cup of chocolate glazed donut coffee on the side. Some of you guys were wondering how the coffee tastes, after I blogged about it the other day. It’s amazing.
Lunch:
Lunch was pretty satisfying. I’ve been trying to do more meal prep lately, and cooked up several chicken breasts Sunday night (while impatiently waiting for Girls to start on HBO) to have on hand for the week. So I had one of those, seasoned with Mrs. Dash, alongside a huge helping of steamed veggies and quinoa. There’s feta on that quinoa. A necessary step.
Supper:
Supper was fairly colorful too! I steamed more veggies, and cooked them into a 4 egg white scrambler. I ate it outside (on my brand new patio furniture, I might add … I’m in love) away from all sorts of technology. It was a great way to unwind after one heck of a day and enjoy the outdoors. I loved the time to myself
Dessert:
Since my supper was fairly light, I decided a needed a little somethin’ somethin’ about an hour later. Enter a Greek yogurt/peanut butter/chia seed combo. Eaten while snuggled under a quilt, flipping between The Bachelorette and Keeping Up With The Kardashians … the epitome of trash television.
There ya go! Another WIAW in the books. Now I’m going to go check out some other delicious eats. Enjoy your day!









that is honestly my favorite keurig cup flavor! I’m sure it was amaze balls with the overnight oats. My kind of breakfast!!!
I love the idea of adding cocoa powder to your overnight oats…I will have to give that a try!
Glad you found some of the stress helpers recommended as useful. your meals really do look nice and colorful. But that chocolatey breakfast got me frooling! Time for overnight oats to make a comeback in kammies tummy
I’m sorry I missed yesterday’s post, but you’re so right about all the tips you’d remembered or forgotten. I have a huge list of things I can pick from, which helps! Those oats look SO GOOD! recipe? I’m always looking for a big, thick, overnight oat recipe.

How is ‘Girls’? I’ve been meaning to watch it but am not back in the states yet. I’ve heard good and bad about it, but is looked more real than other shows.
Oh.wow. I need to find that flavor pronto… I am SURE it would be a favorite of mine! That is great you found some de-stressing tips to be helpful, I need to use some of those too!
I just started experimenting with overnight oats. Your chocolate recipe looks awesome. Adding it to my menu for next week!

We don’t get “E!” at the hotel, so I have missed Keeping up with the Kardashians for 3 months now! What a tragedy!
