It’s already Wednesday?! Yikes!
This week’s What I Ate Wednesday, brought to you by the lovely Jenn over at Peas and Crayons, is filled with eats from Monday.
I was impatient on Monday. I wanted quick. I wanted delicious. I wanted my food now. They say patience is a virtue? Pffffft.
Breakfast:
On a Monday mornings I want to spend as little time as possible in the kitchen, because, well … it’s Monday. I usually don’t get my butt in gear quick enough, so I don’t have a lot of time on Monday mornings anyway. This week I whipped up a bowl of oatmeal with chia seeds, chocolate protein powder and an apple. Then I read blogs while inhaling it. I don’t remember, but I can pretty much guarantee I spilled on my keyboard. That happens regularly.
Morning snack:
I would be super ashamed to find out how many of these crackers I ate at my desk while working. See guys, THIS is why you portion stuff out. Don’t just dig in the box while you type. Or you’ll feel like you’re going to turn into a cracker like I did on Monday. I took this box to work (leftover from my sangria/snackfest on Saturday) to share with my coworkers. We all share our food, all the time. Except I didn’t share these. Whoopsie.
Lunch:
The ultimate convenience and solution for impatience is take out soup. It’s actually a fun story … my friend/coworker and I went to a local cafe for supper on Friday and had this coconut chicken curry soup. It was the soup of the day, and it may have been the best thing I’ve ever eaten. We started talking about it (reliving the magic) around lunchtime on Monday, and wondered what the odds were that they were serving it again. One phone call later, I was one happy camper. It was deliciously spicy, and this was about when my sore throat started to show up. Soup is great when you’re sick. Spicy is also great when you’re sick. This was obviously a fantastic decision. I paired it with a vanilla rooibos tea latte from Starbucks.
Supper:
I felt like crap for supper. I knew I needed to jam as many nutrients into me as possible if I was going to beat the bug that was threatening my immune system (it’s still there today, but I’m a lot better). This meant filling half of a plate with assorted veggies (microwave = my friend), and eating a protein packed wrap. That whole wheat tortilla housed two eggs, chia seeds, two Jamie Eason turkey muffins, yellow peppers, spinach, and a light little smear of leftover Boursin cheese (again, from the sangria/snacking session on Saturday).
Dessert/snack I inhaled before falling asleep on the couch:
So much happiness in one bowl. I wanted more fruit (hello, vitamin C). With chocolate. And peanut butter. And yogurt. I listened to my cravings and piled not one, but two apples in a bowl. On top of that went some carob chips, blueberry Greek yogurt, crunchy peanut butter, and golden raisins. I ate it, and my sick body decided to fall asleep at 7:45. I even missed Gossip Girl. That tells you how gross I was actually feeling.
Enjoy your day! I’m going to check out some other beautiful WIAW’s … but never when I’m hungry. That just makes it worse

Seriously want your dessert. And I love the color of your oatmeal. And I totally love breakfast for supper. Nom Nom. Nice job.
Happy WIAW! The coconut chicken curry soup looks great!
The wrap and veggie combo looks and sounds just delicious! I do eggs in a wrap for breakfast sometimes, but don’t usually think of it for dinner. Great idea!
Super easy! That’s one of my regular meals!
do you use fage or chobani bluberry yogurt?
Neither! It’s a different brand … one that I cannot remember right now. I’ll have to check when I get to my fridge next!
yeah, i can NOT just sit a box of crackers or chips or cookies in front of me like that. they will be gone. all of them. portioning is a must.
Eeesh. Big mistake. They’re gone now
crackers are my kryptonite! can’t have ones I love in the house, and definitely can’t sit w/a box while I blog, etc. but that dessert and soup look marvelous! I’m gunning for an ice cream maker so I can make my own froyo out of my favorite Greek yogurt flavors (like Chobani 0% fat Blood Orange). Can’t wait to “indulge” in that (with toppings, of course – thinking mini choco chips would be great w/the orange) once the weather gets warmer!
Oooh yum! Seriously, that would be the coolest appliance ever. Chocolate chips would be fantastic with orange!
mmm! That soup looks delish- right up my alley!
Oh my. So good.
Awesome to use food as your medicine! And it all looks so fantastic. I hope you are feeling better.
One of my fave things to do – pack those fruits and veggies in! And thank you, I definitely am feeling much better!
I want to inhale that dessert bowl!!!
This made me hungry! Through high school I worked at a frozen yogurt shop -and I always used to put carob chips on it, yum! I haven’t had them in years!
Eek! I am glad you’re feeling better. Coconut curry sounds like my ideal soup! So comforting when you aren’t feeling your best.
It was so comforting. The only thing that woulda been better is if I could’ve eaten it in my jammies.
Wow, that dessert bowl looks so awesome! Haha those crackers are addicting, so yes the box at your desk is dangerous!
So dangerous. Lesson learned.
Love the concoction with the apples and yogurt and toppings. I do the same thing all the time! haha
It was so great! And it left me so full. I just realized I had three apples that day. The Doctor is staying FAR away
That soup looks aaaaaaaaamazing. craving it now!! hope you’re feeling better
I am! Thank you! I feel as though the deliciousness of that bowl definitely contributed. There’s no science behind that theory, but I’m sticking with it.
Delicious and perfect dessert!!
I hope you feel better soon. It was a good Gossip Girl. It should be on Hulu though
I love quick breakfasts, too! I dont have a lot of time on my hands in the morning so I always stick to quick, simple but healthy breakfasts.
Mmm chocolate protein powder in oatmeal looks so good! I tried it with my hemp protein powder-won’t be doing that again;) and your dessert looks amazing!
