Iced coffee, less blow dryer usage, flip flops, driving with the window down, patios…
I LOVE THIS WEATHER.
This week’s What I Ate Wednesday, presented by the lovely Jenn at Peas and Crayons, was eaten almost entirely outside.
I’ve been impatiently waiting for the warm weather to arrive. It finally got here on the weekend and I took full advantage.
Morning snack:
I don’t usually eat before I go to the gym. I know, not the best habit. But either I feel sick when I do that or I’d have to wake up at 4AM for the meal to digest enough before I head to the gym. But Sunday morning (the day I’m featuring in today’s post) I woke up starving. I needed a little somethin’ somethin’ before I left for my workout. So I had an apple and a clementine – so cute – on my balcony.
Breakfast:
After completing a hilly 8 mile stationary bike ride and lots of arm work (read: I felt like jello with a heartbeat), I made breakfast. I used two Nature’s Path Flax Plus with Figs waffles, topped with sliced turkey and poached eggs. If given the choice, I will always pick the style of egg with the runniest yolk. Poached, sunny side up, over easy. If the yolk runs, I’m in
I took advantage of the weather again and ate it on my balcony, with the latest issue of Cosmo alongside.
Lunch:
Lunch was quick and easy. I whipped up a simple tuna salad (tuna + Greek yogurt), and then added sliced green pepper and nutritional yeast. I threw it all into a spinach tortilla, and taaa daaa. I didn’t eat all of this outside … but I did wander outside while I was on my last couple of bites. It counts, right?
Midafternoon:
Up until Sunday, I hadn’t had Starbucks in months. Not sure why, I had just fallen out of the routine of going every Monday morning before work (a money saver, coincidentally). But after my massage appointment, I had an immense craving. Iced green tea, unsweetened. Venti. Delicious.
Supper:
And my last meal of the day on Sunday was eaten on a patio. I told you I was soaking up as much of the great outdoors as I could! I picked up one of my best friends and we headed to the only open patio in town. I had chicken taco salad with romaine lettuce, corn, black beans, tomatoes, green onions, cheddar and Monterey Jack. I think it was just a ranch dressing on top, but I don’t remember exactly. My friend had a pulled pork sandwich … he said it was good. I don’t even think I looked at his plate because I was starved. I had one focus, and one focus only. That salad. And it was good.

I am totally with you on a runny yolk, though I fail miserably at poaching eggs, so it’s always sunny side up for me.
Everything looks so amazing. Being vegan, I recreate many egg based dishes, your eggs looks so Devine.

Wow – that salad looks absolutely amazing. So does your breakfast – and I agree – that is the ONLY way to eat eggs – if it’s runny, its good.

I am a barista, so I get free drinks. When I started my current paleo challenge it basically eliminated everthing I loved from the bucks. So its been hard to find things to drink. Myissue with the iced green tea is that more often than not the timer goes off and the baristas are busy so the tea sits tehre a bit longer, burning the green tea. Leaving a bitter taste.. blugh

I usually don’t eat before the gym either. I hate the feeling of working out with a full stomach – yuck. What isn’t yucky though is that fabulous looking taco salad – mmmmm!

I don’t think I’ve ever eaten an egg with a runny yolk, believe it or not. I used to really dislike eggs, and now I just eat them scrambled or in an omelette. Maybe I need to work up the courage to try some new ways!!

Mmmmm enjoying food outside. That’s a double plus! I need to get some patio furniture for my next place, so I can enjoy the outdoors too.
Yum, now I need lunch! I used to looooove runny yolks and for some reason in the last year I just don’t like them that way anymore. Over-hard eggs all the way!
I also can’t really eat before working out. Maybe a quarter of a granola bar or something TINY!!! During my college running years it took me a while to figure out what time it was okay to have lunch or a snack before practice so I wouldn’t starve but wouldn’t feel sick either during the workout.
I can’t eat before working out either or I get this gag mode going on when I work out. However, I do consume a cup of coffee and a KIND bar. That I am good with.

Speaking of breakfasts, yours looks delicious. I wish I were better at making poached eggs but mine always end up all runny and weird shaped. Any tips?
I WISH I had the talent. But I have an egg poacher. They sit in a tray on top of boiling water. That’s how I do it … one of my favorite items in my kitchen!
Jealous of all your outdoor time! That taco salad does look amazing but I am more drawn to your breakfast. Runny eggs are a win and I’ve never had them with turkey but wow, what a great idea!
