WIAW Deux

I’m back for the party again! Ain’t no party like a WIAW party!

A big thank you and a “holla!” to Jenn over at Peas and Crayons for hosting the weekly What I Ate Wednesday blogging extravaganza.

You can check out my inaugural post from last week here. But not before you see what’s below! I’m a big weirdo, so I’ve decided to start the post with Monday’s dinner and work to Tuesday’s lunch. Just to mix it up, okay?

Monday was a terrible, sucky, “if something can go wrong, it will” kind of day. By the time cooking supper needed to happen, I was worn out. Luckily, my BFF (who I am going to visit this weekend – more on that tomorrow!!!) called me and distracted me while I was cooking and the time flew by.

Grilled salmon fillet, MASSIVE baked sweet potato with greek yogurt (that was only half a potato!!), a handful of carrots

Tiny little bowl of bean salad. I had a craving.

As you can see in the first picture, the feeling of “bleck” followed through into presentation. Yep, I ate that meal off of my cutting board. Mondays suck.

So, here’s Tuesday. Breakfast was oatmeal + chocolate protein powder + sunflower butter.

And multivitamins, of course!

I inhaled copious amounts of my homemade trail mix at my desk to get through to lunch :)

This seriously has like 50 ingredients. I keep a tub of it in my desk drawer.

And Tuesday’s lunch was ugly, but delicious. I eat lunch at home, so I whipped up a plate of spaghetti squash, then topped it with organic spaghetti sauce, nutritional yeast, chia seeds, and an Amy’s Kitchen California Veggie Burger (This was eaten while watching Ellen. Anyone else tired of Sophia Grace and Rosie being on like every other episode?! I am.).

I really need to get plates from this century. So old school.

Do you want to know why I’m so thrilled about life today?

…Because it’s Tuesday.

You can stop staring at the computer screen like I’m a crazy person now. Tuesday means there’s a fitblog chat tonight!

If you’ve read the About Me page on here, you’ll know that I used to have a healthy living blog. That means that I got all amped up every Tuesday about participating in the chat, networking with all of the other stellar bloggers out there, and annoying all of my non blogging Twitter followers (you know that happens).

Well, now that I have a blog again …. guess who can chat again?!?! Me. YIPPEE! Can’t. Wait.

Will I see you there? The weekly chat gets underway at 9pm ET. If you need more information on tonight’s shindig, check out the fitblog website. It’s more than likely I will be watching Biggest Loser while joining in. But I promise no spoilers. Pinky swear!

Another reason I’m excited? We’re one day closer to the weekend.

Too Fast

Good golly Miss Molly – the weekends always go by way too fast.

Ugh!

Looking back now, I realize I spent a lot of my Saturday in front of a screen …. computer screen, TV screen, and movie theatre screen.

I worked quite late Friday night, so sleeping in was necessary come Saturday morning. The first face I saw after opening my eyes? Mr. Jeff Probst. No complaining here. Stud. I needed to catch up on last week’s episode of Survivor: One World (I’m still addicted – 17,000 seasons later), and watching one show on my computer turned into a “I’ll just stay right here on the couch and watch every other show I missed this week because I’m terribly important and missed a whole bunch because of all of my fabulous plans there are too many shows in this world and I can’t possibly get to them all when they air” kind of day.

Marry me? Wait. Split up with current wife THEN marry me?

The laziness continued most of the day Saturday. I did clean up my apartment since I had friends over Saturday night … but let’s face it … I definitely watched 13 Going On 30 aaaaand Ghost while vacuuming and such. So much brain mush TV watching time. Yikes.

And the screen watching time didn’t stop there, folks. Oh no.

Guess who went and saw The Vow on Saturday night?! I did.

And cried. But honestly, that’s not much of a shock. I purposefully wore a scarf so I would have something to wipe my tears with ;)

All in all, a great weekend! I spent quality time with some of my closest girlfriends Saturday night (a little dancin’ was done) and then went to go visit my parents on Sunday afternoon.

Sunday night? Couch + sweats + blanket + Oscars = SUCH a glamorous life. And it was amazing.

True – it’s always long. Ridiculously long. And it can get boring at some parts, too. But I will always love the Oscars. I get completely caught up in the romance of it all. The dresses, the glamour … I love it all. And I know people will make fun of how Billy Crystal did … call him past his prime … but I loved him. With him back on stage as host, it reminded me of watching the Oscars when I was a kid.

Did you watch the show? Have a favorite dress from the red carpet? I have several picks … but Ellie Kemper was near the top of my list. Just beautiful!


The Beauty Of The BLD

Some of my favorite meals are ones that can be eaten at any time of day.

To borrow a phrase from one of my personal superheroes, Rachael Ray, “BLD Meals” are usually super easy and are some of my preferred comfort foods.

BLD stands for Breakfast, Lunch, Dinner. If you were wondering.

I’ve found that eggs tend to be a common factor in BLD’s … and they just happen to be part of today’s post!

Does anyone else love Natalie Dee?

Today’s featured BLD … an egg white quesadilla. I had it for dinner the other night, but it’s definitely made an appearance around 8AM and noon in my house, too :)

I took a whole wheat tortilla, topped it with olives, nutritional yeast, spinach, and feta. Next came three egg whites – I was STARVING – and then I threw it all onto the grill.

Once it was all crispy and brown and fantastic looking, I threw some greek yogurt on there (shocking, right?) and added some carrots on the side.

 Bueno!

Do you have some meals that you can eat any time of the day? Oatmeal is for sure on my list too. I can eat a bowl full of that stuff at 6:00 in the morning, 2:00 in the afternoon, or at midnight in front of Saturday Night Live.

And pancakes? Pffft. I’d eat those anytime, anywhere.

 


The Kind Of Pancake

So, as you know, Tuesday was Fat Tuesday/Mardi Gras/Shrove Tuesday. An excuse for pancakes, right?

When I took my lunch break at home on Tuesday (I’m so lucky to be able to do that), I was craving a big bowl of comforting oatmeal. But I felt as though I should pay homage to the day. I mean … the day is meant for pancakes.

Who says you can’t have both? Together?

I turned to my BFF, Google, for some much needed guidance. I found this recipe over on Julie’s blog … and gave it a try.

It wasn’t pretty.

In the frying pan.

But … it was delicious. I’m one of those weird people who appreciate undercooked pancakes (and cookies, too - is that strange?). The “batter” for this oatmeal/pancake creation was reallllllly thick. It obviously wasn’t going to cook all the way through. So I kept in the frying pan for roughly 20 minutes, and kept folding it into itself. It was turning into a really nice dense little cake. It had a shape on the outside … and was this amazing, thick oatmeal on the inside.

Mission = accomplished. I wanted oatmeal, but felt obligated to make pancakes. This looked like a pancake (kind of), and had a thick filling.

Good lord, it was ugly. But after topping with peanut butter and a banana, it was almost disguised.

Please ignore my ghetto plates from the '80s.

A perfect lunch to fill me up, and help me get through the rest of the day! Did you celebrate on Tuesday with pancakes?


The Inaugural WIAW

Holy cannoli it’s my VERY FIRST WHAT I ATE WEDNESDAY!

A big thank you to Jenn over at Peas and Crayons for hosting this crazy WIAW party … I’m so excited to be joining :)

These are my eats from Sunday …

Pancakes! Bob's Red Mill pancake mix, topped with greek yogurt and chia. A delicious apple on the side :)

 

Breakfast was more like brunch ... so lunch was light! A bowl of quinoa topped with greek yogurt, a loosey goosey egg and a couple squirts of hot sauce.

 

Supper = two whole wheat wraps stuffed with chicken breast, spinach, olives, corn, greek yogurt, nutritional yeast and chia. Roasted sweet potatoes on the side.

Not pictured = a banana mixed into lemon greek yogurt, eaten in front of Celebrity Apprentice (which I’m ashamed of watching) and Khloe & Lamar (even more ashamed of watching).

Can we just take a second so I can say “I told you so!!” about my greek yogurt love affair. It’s in every single meal and my late night snack.

Is there some sort of form I can sign at work so yogurt manufacturers just take a percentage off of my regular pay cheque and drop of boxes at my front door? I feel like that would save me some time … that section of the grocery store is like my second home.

The TV Junkie’s Workout

If you’re a heavy duty TV watcher like me … Mondays are hard. (#firstworldproblems)

Seriously though. There are so many TV shows on Monday nights.

Let’s look at the run down, shall we? Prepare to judge me.

First up, The Bachelor – filled with catty women, cheesy dates, “he is my destiny” kind of interviews, and Ben’s weird hair.

Moving onto the sitcom lineup … we have How I Met Your Mother, 2 Broke Girls (SUCH a gem), Two and a Half Men, and Mike & Molly.

That right there is a lot of television. But I’m not done.

I TOLD YOU you would judge me.

The night wouldn’t be complete without Gossip Girl and all of it’s Blair Waldorf/Chuck Bass drama. And the fashion? Oh my.

Then, things get musical with Smash. This is a newer show on NBC. Have you seen it? Brilliant.

And last, but certainly not least, we have The Voice. Where I drool over Adam Levine for most of the episode. And also marvel over the fact that I think Christina Aguilera is morphing into a singing version of Snooki (anyone else see that?).

**DISCLAIMER: I’ve never, ever, ever had a night where I’ve seen all of these shows in one sitting. That would be ridiculous. I end up watching most of the episodes online throughout the week when I get a chance. Can you IMAGINE how mushy my brain would be if I stayed up watching all of that in a single night?**

So you see … that’s a lot of TV. And that can turn into a serious couch potato “butt indent in the couch” kind of an evening. So I get active on commercials.

Usually, it’s lunges. I do them from one side of my living room to the other for most of a commercial break. It might not seem like a lot … but when you do even 50 every break for an hour long show … that adds up. Holy booty.

I couldn’t get to the gym yesterday (apparently Family Day/President’s Day means the gym gets to be open for a very stupid, small window), so I rocked this last night instead. Lunges during every commercial break of Gossip Girl … squats during every commercial break of Smash.

I hurt today.

See … you don’t need a gym for a rocking butt. You just need to be a TV addict ;)

Working Day

Well hello, Monday. I didn’t want to hang out today. But here you are. Persistent, aren’t you?

A lot of people have today off of work/school because it’s Family Day or President’s Day, depending on where you are.

While it’s Family Day where I am, I do not have the day off. This blondie is working. Oh well.

I managed to get a workout in yesterday, which is a good thing … since I can’t get to the gym today. Why not, you ask? I go at 6AM everyday, and because of this whole “let’s take Monday off” thing, the gym isn’t opening until 10AM. And will be closed almost immediately after I get off of work.

Yeesh, people! What about us working folk?

So, it’s a good thing I got there yesterday. Not that I can’t do workouts at home … I just like the gym better. Here’s Sunday’s workout:

 There it is! My arms were quite jello-ish once I finished it. Love that feeling!

The rest of Sunday was spent on the couch, catching up on all of the television shows I missed last week. Quite a list. I watch A LOT of shows. Included on yesterday’s roster … Happy Endings and Cougar Town (penny can, anyone?).

So. Funny.

The Goods

Yesterday was crazy town. I was really busy … doing terribly unexciting things. I spent hours doing laundry. I had let the pile build up for a couple of weeks. I have too many clothes, so I can let that happen. A blessing and a curse.

Laundry doing just screams glamour, right?

Then, task number two: grocery shopping. Pretty sure I had left shopping longer than I had left the laundry. So there’s your indication of the length of my list. I needed to get on track. Ghosts were living in my refrigerator.

I took my massive grocery list to the store. And when I say store, I actually mean four different stores. Does everyone go to a hundred different places like I do?

Usually I LOVE grocery shopping. I love writing the list, I love looking at different items in the store, I love taking my time, I love it all. Not yesterday. No ma’am. I didn’t want to. But if I wanted to eat today/the rest of the week, it was necessary.

So I went. But I wasn’t happy about it.

But I’m happy now! Here’s some of the goods:

Buying in bulk, baby! Oats, quinoa, bulgur, brown rice penne, nutritional yeast, lentils, beans ...

That’s just a sneak peek of some of the goods. Oh, and those three tubs of greek yogurt? They’ll be gone by Saturday. I have no self control when it comes to that creamy, delectable goodness. I put it in every meal.

As much as shopping sucked with a capital S (seriously … screaming children in every single aisle), I’m relieved to have food in my cupboards/fridge/freezer again.

The problem now, though? Too many options! I don’t know what to cook today!

Hey hey hey!

Today has been all about getting the new blog organized. Whew. My eyes kind of hurt from staring at the computer screen. But it’s a good hurt. An “I feel accomplished” kind of hurt.

Now where are my glasses? I should have those on. I’m going to get wrinkles from squinting.

Anyway. I think I’m making some headway! I’ve created a Twitter account for the blog. You can find me at @yellowhaired1

This is actually my third Twitter account. I run the account for the company I work for, and then I have the account that I use to network for my job. Now I have this one. Whew. Thank goodness for the wonder that is my iPhone (yeah, I’m one of those people).

I’ll use this wonderful new account to notify my followers of new posts, share articles that I’m reading, and participate in the Tuesday night fitblog chat. Don’t you just love Twitter?!
